15 Minute Nachos- Made with Leftover Tacos

Tacos are HUGE around my house. I love to make tacos with ground beef, shredded rotisserie chicken, and even shredded pork...a sort of carnitas. Usually I make a lot, so we can have leftovers. A lot of times I use the taco meat to make nachos. Who doesn't like to transform leftovers into something different and exciting?

Let's make some nachos.

So....here's what you are going to need.

-taco meat (this time I used taco seasoned ground beef)
-tortilla chips (try Juanita's- they are really thin & crispy)
-shredded cheese- I buy Kraft pre-shredded Mexican Four Cheese Blend
-toppings- scallions, tomatoes, olives, jalapenos...whatever you like
-dips for serving- sour cream, salsa, guacamole

Now, lets put it all together.

-Line a large baking sheet in foil, and spray with non-stick cooking spray.
-Start with an even, thin layer of tortilla chips.
-Next, sprinkle with about half of the cheese, and then half of the taco meat.
-Now you want to add another thin layer of tortilla chips.
-Repeat with remaining cheese and taco meat- leaving a handful of cheese for top.
-Add your toppings by sprinkling evenly.
-Finally, sprinkle the last handful of cheese over top.

 
Bake in a 400 oven for 5-10 minutes, just until the cheese is melted and the chips start to brown lightly on the edges.

Remove from oven and serve with dips. I used sour cream and salsa, what I happened to have on hand.

 
 
Pretty simple...but definitely delicious. Perfect way to use up leftovers and make a quick meal on a busy night.
